Ingredients:
3 1/2 Pound(s) pitted and sliced peaches
3/4 Cup(s) brown sugar
1/2 Teaspoon(s) cinnamon
1 1/2 Tablespoon(s) corn starch
1 Teaspoon(s) vanilla extract
2/3 Cup(s) oatmeal packet
1/4 Cup(s) flour
1/4 Teaspoon(s) salt
2 Tablespoon(s) butter
1 Tablespoon(s) lemon juice
1 Teaspoon(s) water

Optional Ingredients:
3 1/2 Pound(s) instead of peaches pears Add to shopping list

Directions:
1. On a floured surface, roll out the dough to a 12-13 inch circle. Fit the dough into a 9-inch pie pan, pressing to fit and crimping the edges to form a rim. Freeze 20 minutes.

2. Preheat the oven to 375F. To prepare filling, in a medium bowl, combine the peaches, brown sugar, cinnamon, cornstarch and vanilla extract; toss well. Transfer to pie shell.

3. To prepare the topping, in a medium bowl, combine the oats, flour, brown sugar, and salt. Add the butter, lemon juice, and water; stir to combine. Press the topping mixture together to form clumps, then break them into smaller pieces over the filling.

4. Bake 40 minutes, then tent loosely with aluminum foil to keep topping from over browning. Bake until the filling is thick and bubbly, 40-45 minutes longer.

(if the fruit is canned or pre cooked only cook for 60 minutes total.)

Basic Pie Crust ( Required ) :
1 Cup(s) flour
2 Teaspoon(s) sugar
1/8 Teaspoon(s) salt
2 Tablespoon(s) shortening
2 Tablespoon(s) butter
1 Teaspoon(s) Cider Vinegar
3 Tablespoon(s) water
Directions:
1) In a large bowl, combine the flour, 2 teaspoons of sugar, and salt. With a pastry blender or two knives, cut the butter and shortening into the flour until the mixture resembles course crumbs. Stir in the vinegar and the water, 1 tablespoon at a time, until the dough begins to form. Press the dough together and shape into a disk.

2) On a floured surface, roll out the dough to a 12-13 inch circle; fit into a 9-inch pie pan, pressing to fit and crimping the edges to form a rim.
