Directions:
1) cook the fettuccine according to package directions. Drain, reserving 1/2 cup of the cooking liquid, and keep warm.
2) In a large nonstick skillet, heat the oil. Add the onion; cook, stirring as needed, until softened, about 5 minutes. Add garlic; cook, stirring, about 1 minute. Stir in the spinach, tomatoes and salt; cook, stirring, until spinach is wilted, 4-5 minutes. Add the pasta, 1/4 cup of the cooking liquid and the cottage cheese; cook, tossing, until just heated through; add more cooking liquid as necessary to make the sauce creamy. Sprinkle with the pepper and nutmeg. |
