Ingredients:
2 Tablespoon(s) vegetable broth
1 Tablespoon(s) red wine vinegar
2 Teaspoon(s) olive oil
1/2 Teaspoon(s) oregano
1 Pinch(s) salt
1 Pinch(s) black pepper
4 Slice(s) crusty peasant cubbed bread
4 tomato
2/3 Cup(s) part skim mozzarella grated cheese
1/2 Onion
2 Tablespoon(s) basil leaves
2 Tablespoon(s) parsley
Directions:
1. In a small bowl, whisk the broth, vinegar, oil, oregano, salt and pepper.

2. Place the bread in a large salad bowl; sprinkle with enough water to moisten slightly without making soggy. Add the tomatoes, cheese, onion, basil and parsley; drizzle with the dressing and toss to coat. Let stand at least 30 minutes, but no more than 2 hours, to blend flavors.
