Directions:
1) Cook the penne according to package directions. Drain, reserving 1/2 cup of the pasta cooking liquid, and keep warm.
2) In a large nonstick skillet, heat the oil. Add the zucchini and salt; cook, stirring as needed, until very soft, about 10 minutes. Stir in the penne and cooking liquid; cook, stirring as needed, until the liquid is slightly reduced. Then reduce the heat and stir in the goat cheese; simmer, stirring and breaking up with the spoon, until just melted, 1-2 minutes. Sprinkle with the mint and pepper; serve at once. |
