Ingredients:
1 Teaspoon(s) olive oil
1 Can(s) black beans
1 Onion
3 Tablespoon(s) taco seasoning
1 Can(s) 14.5 oz tomato
1/4 Cup(s) water
4 6 inch corn tortilla
1/4 Cup(s) reduced fat cheddar cheese
8 black olives
1 Tablespoon(s) jalapeno pepper
Directions:
1. Preheat the oven to 425 F. Spray a nonstick baking sheet with nonstick spray; set aside.

2. Heat a large nonstick skillet over medium-high heat. Swirl in the oil, then add the beans, onion, and seasoning mix. Cook until onions are browned about 7 min. Stir in the tomatoes and water; bring to a boil. Simmer, uncovered, over medium-high heat until most of the liquid has evaporated, about 8 min.

3. Meanwhile, spray another large nonstick skillet with nonstick spray and set over medium-high heat. Add one tortilla and cook, turning occasionally, until crisp and golden, about 5 min. Repeat with the remaining tortillas.

4. Arrange the tortillas on the baking sheet. Spoon the bean mixture onto the tortillas. Sprinkle each with the cheddar, olives, and jalapenos.

5. Bake until the filling is hot and the cheese is melted and bubbly, about 15 mintues.
